In Vino Veritas...

Since 2015 we have lived in the Piedmont where we have been able to turn our dream “IL SOGNO” of our own wine and a life in Italy into reality. Our vineyard consists of approximately 12-14 year old vines on 1 ha, about half of the amount Barbera and the other half Freisa (an old Piedmontese type of vine which is considered a parent variety of Nebbiolo). Our new vines, planted 2014, cover 1,5 ha and contain one third Barbera, Merlot and Syrah. Cortese, a Piedmontese white wine grape, is also present in smaller amounts. 

 

The vineyard has been cultivated and treated according to organic principles since 2014.

We are certified organic since the harvest 2018 .

 

Our grapes are picked by hand, separated into varieties, pressed and filled into our 1200 litre big and open fermentation tanks without pumps.

There the alcoholic fermentation with manual punching down and over pumping of grape juice takes place. The grape marc is thereafter pressed with 1,5 bar and afterwards put to the bio-compost.

After the malolactic fermentation the wine ages in different oak barrels for approximately two years.

Then , depending the volume of the varieties of each year, we are assambling the wine of the year ,

and afterwards we will let him age in the bottle for approximately 20 months , before we release him for sale .

 

Our bottle label will be designed from a different artist every year while maintaining our logo “IL SOGNO”.
